Macadamia have been my go-to nut ever since I started a ketogenic diet. In addition to being the lowest carb nut and incredibly versatile and delicious, they are one of the world’s best sources of healthy Omega-7 palmitoleic acid, high MUFA, low linoleic acid, and low in phytates, lectins and oxalates. Macadamia oil also has a high smoke point and is great for cooking eggs and making do-it-yourself mayo, sauces and dips. And don’t get me started on dipping dark chocolate in macadamia butter!
